Dry Ingredients

  • 1 cup almond flour
  • 1/3 cup tapioca flour
  • 2 tbsp coconut flour
  • 1 1/2 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt

Wet Ingredients

  • 1 cup apple sauce
  • 3 eggs
  • 1/2 cup date paste
  • 1 apple chopped

Topping

  • 1 tsp ghee
  • 1/2 cup pecans or walnuts crushed
  • 1/2 tsp cinnamon
  • Preheat your oven to 350°F (175°C).

  • In a large bowl, combine the dry ingredients.

  • In a separate bowl, combine the wet ingredients until smooth.

  • Add the dry ingredients to the wet ingredients and stir until well combined.

  • Stir in the chopped apple.

  • Portion the batter into a greased muffin tin or use paper baking cups, filling each cup about 3/4 of the way up.

  • In a small bowl, combine the ghee, pecans or walnuts, and cinnamon for the topping. Sprinkle a bit of the topping on top of each muffin.

  • Bake for 20-23 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

  • Allow the muffins to cool before serving. Enjoy!
